Rice Noodle Stir Fry

Nutritional Value:

Ginger has anti-emetic, anti-inflammatory, circulatory, and digestive benefits. Add fresh ginger half at the beginning of cooking and half at the end for good flavor and to make the most of its medicinal benefits (get a copy of Dr. Andrew Weil’s Ultimate Guide: Food & Nutrition for more info on this super spice!).

Flavors:

The main flavors in this dish should really be ginger, with an underlying hint of soy sauce. If you the ginger doesn’t give you a kick when you try it, you probably need to add a little more.

Ingredients:

  • Sesame Oil (2 tablespoons)
  • Soy Sauce
  • Garlic Salt (2 shakes)
  • Cracked Red Cayenne Pepper (about 1 tablespoon)
  • Garlic (3 cloves)
  • Ginger (about 1 tablespoon)
  • Salt (1 shake)
  • Pepper (2 shakes)
  • Onion (1/2)
  • Green Pepper (1)
  • Carrots (8 baby carrots)
  • Green Onion (1 stalk)
  • Eggs (3)
  • Rice Noodles (about 2 handfulls)

Put Your Own Spin On It

You can always switch out any of these vegetables for ones that you like best and you can even switch out the rice noodles for white rice and turn it into fried rice instead! An example below!

Recipe

  • Gather all of your ingredients.

  • Now, cook your noodles. Follow the instructions on the package. Yours may not have instructions (mine didn’t), so just boil the noodles 7-8 minutes, or until they’re soft when you bite into them. You can kind of see what they should look like in the picture I have of it being drained.

  • You can be cutting and preparing your vegetables while you wait for the water to start boiling to put your noodles in. I like to dice my onions and julienne my green pepper and carrots (albeit very roughly julienned!)

  • Next, drain the noodles completely.

  • Take this chance while your noodles and vegetables are sitting to mix 3 eggs together in a bowl, adding a small shake of salt and pepper before pouring it into a frying pan to scramble them. I like to add just a little bit of water to my eggs to make them a little fluffier.
  • Set the eggs aside.
  • Add sesame oil to another frying pan. Then add the onions, garlic, half of the ginger. Allow the onions to soften a little before adding carrots and green peppers to the pan.

  • Once the green peppers and carrots look soft, add the eggs.
  • Now you can add the salt, pepper, garlic salt, red cayenne peppers, soy sauce, and the other half of the amount of ginger.
  • Garnish with green onions and your stir fry is ready to serve!
